Upgraded Marble Cake

Marble pound cake is already very known and good dessert which we all love. This Marble Cake with Marbled Frosting is an upgrade of it. It is composed of marble sponge cake and marble frosting with vanilla and chocolate pudding.

Preparation of upgraded marble cake is more demanding and takes a little longer than simple marble pound cake, but despite this it is not too hard if you have experience at baking. Total making time, together with baking and cooking the puddings is about 1 hour and a half.

Upgraded Marble Cake
Ingredients (for a square baking tray 35×40 cm)

Marble Sponge Cake

  • 5 eggs
  • 180 g sugar
  • 190 g flour
  • 10 g baking powder
  • 1 tsp vanilla essence
  • 50 ml water
  • 100 ml oil
  • 25 g raw cocoa powder

Vanilla Pudding Frosting

  • 600 ml full-fat milk
  • 120 g vanilla pudding powder
  • 4 tbsp sugar
  • 150 g unsalted butter

Chocolate Pudding Frosting

  • 600 ml full-fat milk
  • 120 g chocolate pudding powder
  • 4 tbsp sugar
  • 150 g unsalted butter

Raw cocoa powder for sprinkle



First, cook both puddings so they cool down soon enough – make them separately, of course. Boil milk and sugar. Mix vanilla pudding powder with some milk and pour the mixture into boiling milk. Stir constantly. Cook until it becomes thick or starts to boil again. Set aside and let cool. Repeat for chocolate pudding.

Prepare the marble sponge. Whisk eggs and sugar. Add flour, baking powder, vanilla essence, water, and oil. Mix until just combined. Pour half of the mixture in a greased baking tray. Add cocoa powder in the remaining mixture and mix again. Pour the cocoa mixture on the vanilla mixture in spots. Use a stick to create a lovely pattern. Bake for 25 minutes on 180° C.

Marble Sponge

Whip the butter until it turns fluffy. In one bowl, mix it with vanilla pudding, and with chocolate pudding in another bowl. Arrange every frosting, vanilla and chocolate, on a baked marble sponge with a small spoon so every piece of cake will have both frostings.

Vanilla and Chocolate Frosting

Sprinkle the cake with raw cocoa powder and set in fridge for at least 3 hours which makes the cake easier to cut. Cut it in square pieces.

You can keep the cake in fridge for 3 to 4 days. It is best served cold.
