Blondies are simply chocolate-free brownies. Unfortunately, this makes them pretty underrated. But not with the right extra ingredients! I made blondies with melted white chocolate, white chocolate pieces and crunchy macadamia. Great dessert!
Blondies must be prepared with brown sugar and vanilla. I also added rum to enhance those two flavours. Blondies can be baked only for 20 minutes to have a chewy structure. But if you want them completely baked, I recommend 25 minutes of baking time. The recipe does not contain baking powder because you don’t want your blondies to rise too much.
Ingredients (for 20 pieces)
- 150 g white cooking chocolate
- 70 g unsalted butter
- 4 eggs
- 70 g brown sugar
- Teaspoon vanilla essence
- Tablespoon rum
- 2 tablespoons full-fat milk
- 2 tablespoons vegetable oil
- 200 g multipurpose flour
- 150 g white chocolate, cut in pieces
- 50 g roasted unsalted macadamia
Melt white chocolate and butter.
Meanwhile, whisk eggs with brown sugar. Whisk for at least 5 minutes. Add vanilla essence, rum, milk, oil, and melted butter with white chocolate. Stir thoroughly.
Add flour and stir again until just combined. Finally, add pieces of white chocolate and macadamia (cut the bigger pieces into smaller ones).
Pour the mixture in the square baking tray, covered with parchment paper. Bake for 20 minutes (for chewy structure) or 25 minutes (for completely baked blondies) on 180° C.
