Yogurt Peach Layer Cake is a very simple and quickly prepared cake. This delicious dessert is an ideal treat for summer picnics because the yogurt-peach combination makes it super refreshing. Yogurt-Peach Layer Cake is composed of extemely fluffy vanilla sponge, yogurt frosting with whipped cream, and pieces of peach. I decorated the cake simply with almond leaves and canned peaches.
You can use canned peaches or fresh ones. Procedure differs only in this: fresh peaches should be covered in sugar and have some time to sweeten.
The cake is 26 cm wide and can be cut into 15-18 pieces. It has 3 layers of sponge and 3 layers of yogurt frosting. It is prepared so quickly that you will have entire cake done in only 2 hours (including baking time).
- Yogurt Peach Cake
Ingredients
Vanilla Sponge
- 6 eggs
- 180 g sugar
- 200 g flour
- 15 g baking powder
- 10 g vanilla sugar/tsp vanilla essence
- 50 ml oil
Yogurt Frosting with Peaches
- 500 g yogurt
- 100 g sour cream
- 400 ml sweet cream
- 75 g powdered sugar
- 30 g gelatine powder
- 300 g canned peaches or fresh peaches with 2 tbsp sugar
Procedure
Prepare the vanilla sponge. Whisk eggs with sugar thoroughly. Add vanilla sugar, oil, and flour with baking powder. Mix until just combined. Pour in round baking tray (26 cm) and bake for 35 minutes on 180° C.
Meanwhile, prepare the yogurt frosting. Cut peaches into small pieces. Whip the sweet cream. In other bowl, mix yogurt, sour cream, and gelatine powder. When thicker, add some sugar. Mix with whipped cream and pieces of peach.
When the sponge has cooled down, cut it twice so you get three layers.

Place the first layer of sponge on cake tray. Optionally, moisten it with peach or apple juice. Cover with one third of frosting. Repeat the procedure two times.
Decorate the cake with peach slices and sliced almonds.
