Dessert cups with fruit are popular summer dessert. Vanilla Fruit Dessert Cups are made of light egg white sponge, vanilla cream, sweet cream, and various fresh fruits: bananas, kiwi, strawberries, raspberries, blueberries … I like dessert cups because the portions are already decided, and I can’t take just another half. Besides, they look so pretty, and serving is much easier since you don’t have to cut the cake – bonus points for everyone who always struggle with picking the right knife and cutting the fruit cake with fruit falling out of the cake.
I prepared the dessert cups in 200 ml cups. You can also use smaller or larger ones, depending on how big dessert you want. The preparation time is 1 hour and 30 minutes, together with baking time.
Since the egg white sponge and vanilla cream are already sweet enough, I don’t sweeten the fruit. You can use any fruit you like; I suggest using the fresh and seasonal fruit. Don’t refrain yourself: use as much as you want! I prepared the vanilla cream with vanilla pudding because I stay away from egg creams in the summer. But you can use another cream if you want to.
Ingredients (for 5-6 cups of 200 ml)
Egg White Sponge
- 5 egg whites
- A pinch of salt
- 150 g powdered sugar
- Tsp vinegar
- 400 ml milk
- 40 g vanilla pudding powder
- 3,5 tbsp sugar
- 100 ml whipping cream
- Fresh fruit: bananas, blueberries, kiwi, strawberries …
- 100 ml whipping cream for decoration
Prepare the vanilla cream. Heat up milk and sugar until boiling. Mix vanilla pudding powder with some of the milk and pour the mixture into boiling milk. Stir while cooking until it becomes thick. Set aside and let cool.
Whip the egg whites with a pinch of salt. When they form distinct peaks, slowly add powdered sugar. Lastly, add a teaspoon of vinegar and mix. The mixture should be firm, white, and shiny. It shoudn’t be runny or change its shape if you turn the bowl. Arrange the mixture on the baking tray (I used one with 20×35 cm dimensions), covered with baking paper. Bake for 45 minutes on 160° C.
Whip the cream. Take half of it and mix it with vanilla pudding. The remaining cream will be used for decoration.
When the egg white sponge is cold, cut circles from it. Help yourself with one of the cups in which you want to make your dessert.
Wash and clean the fruits and cut them into thin slices.
I prepared my dessert cups in the following way. I put a circle of egg white sponge on the bottom, covered it with some bananas, added a spoon of vanilla cream, covered with kiwi, and then with another egg white sponge. Then I sprinkled some blueberries and covered them with vanilla cream. I decorated each cup with piped whipped cream.
Of course, you can set your cups in any way you like.
