The Coconut Amaretti

Who says we should bake cookies only in winter? Today I have for you a simple recipe for tender cookies, appropriate for summer also. Actually, their taste reminds me of summer. The original Amaretti are famous Italian cookies, whose main ingredient are almonds. Coconut Amaretti are my own, slightly different (of course, the blog is named Bake Something Different) version, where I replaced some of the almonds with coconut flour. They simply melt in your mouth!

Did you know? For Coconut Amaretti, you will need only 5 ingredients. And you prepare them in less than one hour! Besides that, they are also gluten-free. Enjoy them by your iced coffee, summer is waiting!

Coconut Amaretti cookies

From these ingredients, you can make approx. 30 pieces.


  • 75 g coconut flour
  • 150 g almond flour
  • 150 g powdered sugar
  • 10 g vanilla sugar/tsp vanilla essence
  • 3 egg whites



Mix coconut flour, almond flour, 200 g of powdered sugar, and vanilla sugar (or essence).

Meanwhile, whip the egg whites so they form peaks.

Gently add the dry ingredients in egg white mixture. Stir until just combined.

Cookie dough for Amaretti

Shape balls in size of a walnut and roll them in the remaining powdered sugar.

Place them on baking tray, covered with baking paper. Bake for 15 minutes on 180° C.
