A simple recipe for a moist and sweet honey cake. Honey Buckwheat Cake is made of buckwheat sponge with honey and walnuts, yogurt and sour cream frosting, and walnut buttercream. The cake will be finished in less than two hours and serves 14-16 pieces.
I made this cake for my dad’s birthday. He loves anything with buckwheat so he was really pleasantly surprised!
The cake is suitable for those who opt for gluten free. I suggest you leave out the cocoa powder and gelatine powder. Instead of eggs, applesauce can be used.
Ingredients
Buckwheat Sponge
6 eggs
140 g sugar
10 g vanilla sugar
50 ml vegetable oil
3 tbsp honey
150 g buckwheat flour
15 g baking powder
50 g minced walnuts
10 g cocoa powder (optionally; leave out if you want gluten free)
Yogurt and Sour Cream Frosting
200 ml sweet cream
150 g sour cream
300 g yogurt
30 g gelatine powder
2 tbsp powdered sugar
3 tbsp honey
2 tsp vanilla essence
Walnut Buttercream
200 g butter
3 tbsp honey
50 g minced walnuts
Decoration
200 ml sweet cream
70 g minced walnuts
Procedure
First, prepare the sponge. Mix eggs, sugar, and vanilla sugar for about 8 minutes. Add oil and honey. Stir. Add flour, baking powder, walnuts, and cocoa powder. Stir again until just combined. Pour in 26 cm round baking tray and bake for 25 minutes on 180 degrees C.
When baked, let cool. Then cut into three layers.

Prepare the frostings.
For yogurt and sour cream frosting, firstly whip the sweet cream. Add yogurt, sour cream, and gelatine powder (optionally; it’s thick enough without it, too). Mix for about 1 minute. Then add the remaining ingredients and mix again.
For buttercream, whip the butter. Add honey and minced walnuts. Mix thoroughly.
Time to set the cake!

Start with sponge cake, then spread yogurt and sour cream frosting, cover with the second layer of sponge, spread the buttercream and finish with the last sponge layer.
You can decorate your cake with whipped sweet cream and minced walnuts as seen on picture. Or be creative and design your own decoration idea.
