Banana Snow Balls

A perfect dessert for winter time: snow balls! Banana Snow Balls are fluffy, creamy mini cakes with a banana in the middle, and its aroma can also be found in frosting. The preparation is a little longer than usually with my recipes, but the cakes are definitely worth it.

Banana Snow Balls are made from cocoa and vanilla sponge, bananas, and vanilla frosting with banana aroma. Roll them into coconut and put in muffin paper cups. The cakes will look fancier, and they will be easier to serve.


Ingredients (for 35 pieces)

Cocoa Sponge

4 eggs

140 g sugar

165 g flour

20 g cocoa powder

15 g baking powder

50 ml vegetable oil


Vanilla Sponge

4 eggs

140 g sugar

175 g flour

15 g baking powder

50 ml vegetable oil

1 tsp vanilla essence/10 g vanilla sugar



1 l milk

115 g vanilla pudding powder (or 6 tbsp flour and 3 tsp vanilla essence)

9 tbsp sugar

3 tsp banana aroma/essence

150 g unsalted butter


Other Ingredients

2 bananas

150 g coconut



First, prepare the frosting. Heat up the milk with sugar until boiling. Take away a few spoons of milk and mix it with vanilla pudding powder (or flour and vanilla essence). When milk boils, pour the mixture inside and cook until boiling again or the mixture becomes thick. Lastly, add banana essence. Set aside and let cool. Take unsalted butter out of fridge so it warms to room temperature.

Prepare the sponges. For each sponge, whip eggs with sugar and then add the remaining ingredients. Stir until just combined. Bake in square 30×30 cm baking tray, covered with parchment paper, for 12 minutes on 180 degrees C. Let cool.

Remove the parchment paper and cut circles out of sponge. They should be about 4 cm wide.

Whip the butter and add prepared pudding. Mix until combined.

Peel the bananas and cut them into small circles. Prepare the coconut in a deeper dish where you will roll your cakes.

Each circle (black and white) thinly spread with frosting. Put banana circles on the white ones.

Cover with white circles.

Spread the frosting around the edge and roll into coconut. Then spread the frosting on the top of the cake and sprinkle it with coconut. Put finished cakes in muffin paper cups.

Keep the snow balls in the fridge. They are the best eaten in first 5 days. Serve cold.
