A recipe for delicious gluten free Christmas cookies. Buckwheat stars with walnuts are made of buckwheat and almond flour and hazelnuts, they are covered with chocolate and sprinkled with hazelnut croquant. Let the house smell of freshly baked cookies!
For the stars, you will need about 3 hours, and you will get approx. 100 pieces.
- 300 g buckwheat flour
- 150 g almond flour (you can use regular as well if you don’t need a gluten free version)
- 200 g powdered sugar
- 285 g unsalted butter or margarine
- 2 eggs
- 15 g baking powder
- 10 g vanilla sugar or vanilla essence
- 70 g minced hazelnuts
- 175 g cooking chocolate/dark chocolate
- 100 g unsalted butter
- 30 g hazelnut croquant (or chopped hazelnuts)
Knead the dough from all listed ingredients. Set it in a cool place and let rest for about one hour.
Roll out the dough. Be careful the surface of the dough is always covered with flour because it’s rather sticky and can quickly rip. Cut the stars using the model. Put them on baking tray, covered with parchment paper and bake for 9 minutes on 180 degrees C.
When baked, prepare the chocolate cover. Melt cooking chocolate together with butter. Stir until all pieces are melted. Dip every star into chocolate.
Before it dries, sprinkle it with hazelnut croquant or chopped hazelnuts. Let dry.
