Dark Chocolate Cookie Pie – this is my recipe for competition Domaćica Challenge by Kraš – Croatian company which produces famous cookies, chocolates, and other sweets and is well-known in Southern Slavic countries.
The cookies have their famous shape so this pie looks exactly like them. They can also be found in cookie basis and in chocolate ganache. So this is a very cookieish, very chocolatey, and very sweet pie! Dark Chocolate Cookie Pie is made of cookie crust with dark chocolate covered cookies, chocolate ganache with cookie bits, and cocoa crust for decoration.
Ingredients
Cookie basis
- 220 g dark chocolate covered cookies
- 85 g unsalted butter
Chocolate ganache
- 400 ml sweet cream
- 15 g unsalted butter
- 1 tablespoon rum
- 350 g dark chocolate
- 7-8 cut chocolate covered cookies
Decorative Cookie Crust
- 200 g flour
- 100 g butter
- 75 g sugar
- 1 egg
- 7 g baking powder
- 50 g cocoa powder
Procedure
Crush the cookies.
- Cookie crumbles
Melt butter and mix it with cookie crumbles. Cover the baking tray with parchment paper and cover the bottom with mixture. You can cover the edge as well if you have enough of it.
Prepare the ganache. Heat up sweet cream and butter. Right before it boils, pour it over the dark chocolate. Add rum. Stir so all the chocolate melts. Add cut cookies and pour the mixture over the cookie basis. Set in fridge for at least 4 hours.

Meanwhile, you can prepare the cookie decoration. Mix all the ingredients and knead the dough. Shape it into the form of famous Domaćica cookie (as in picture) or simply create your own. Be careful you make thin shapes because they expand while baking. Bake for 10 minutes on 180 degrees C.

Additional tip: you will probably have some cookie dough left. I suggest you simply shape balls of it and bake cookies. Bake for 10-12 minutes on 180 degrees C.
