This is a recipe for the tallest cake I’ve ever baked. I made it for my grandparents at their 50th wedding anniversary. To please as many guests as possible I picked a combination of vanilla and cocoa sponge, filled with two frostings with berries. So, this recipe will do for a cake with about 20 slices (diameter is 26 cm). But you can make a smaller cake, so you take only the half of the quantity of listed ingredients.
Ingredients
Vanilla sponge
- 5 eggs
- 150 g sugar
- 200 g flour
- 15 g baking powder
- 10 g vanilla sugar
- 0,5 dl oil
- 0,5 dl milk
Cocoa sponge
- 5 eggs
- 160 g sugar
- 170 g flour
- 50 g cocoa powder
- 0,5 dl oil
- 15 g baking powder
Mascarpone frosting
- 500 g mascarpone
- 250 ml whipping cream
- 3 tablespoons powdered sugar
- 10 g vanilla sugar
- 200 g frozen berries, covered with 50 g sugar
Frosting with sponge cake crumbles
- Crumbles of cocoa sponge
- 250 ml whipping cream
- 200 g frozen berries, covered with 50 g sugar
Decoration
- 500 ml whipping cream
- 150-200 g fresh berries
Procedure
Bake the vanilla sponge. Whisk eggs with sugar. Add other ingredients and mix until combined. Pour in round baking tray, covered with parchment paper, and bake for 25 minutes on 180 degrees Celsius. When baked, let cool and then cut into two layers.

While vanilla sponge is baking, prepare the dough for cocoa sponge. Whisk eggs with sugar, then add other ingredients. Stir carefully until combined. Pour in baking tray and bake for 30 minutes on 180 degrees Celsius. When baked, let cool. Cut off the top and cut the remaining sponge into two layers.

Crush the top or grate it to get fine crumbles.
For mascarpone frosting, firstly whip the whipping cream. Add mascarpone, vanilla sugar, and powdered sugar. Mix until combined. Add berries and stir carefully.

For cake crumble frosting, too, whip the whipping cream. Mix together with crumbles and berries until you get a homogenous mixture.

Time to set the cake! You can decide by yourself how do you want your layers to follow. The frostings are both thick enough so they will stay on their position, wherever this is 😊
I started with cocoa sponge, followed by mascarpone frosting, vanilla sponge, and cake crumble frosting. Then I repeated all the layers.
For decoration, whip the whipping cream and spread it all over the cake. Arrange the berries on top and pipe some flowers. Or simply leave a naked cake.
