Apple Crumble Cake with Vanilla Pudding

Now you already know I love apple crumble. For this week’s fall recipe I prepared even more delicious, creamy version of this well-known cake. And a tip: combine it with a scoop of vanilla ice cream 😉 The preparation time is about an hour, and you will need additional hour for baking.

 

Ingredients (for 10 pieces or 26 cm baking tray)

Sponge

100 g butter

90 g sugar

2 eggs

Teaspoon vanilla essence

120 g flour

8 g baking powder

 

Apple filling

6 apples

2 tablespoons sugar

Teaspoon cinnamon

 

Vanilla pudding

300 ml milk

2 tablespoons sugar

20 g vanilla pudding powder (or 1 pack)

 

Crumble

85 g butter

70 g sugar

120 g flour

Teaspoon cinnamon

 

Procedure

Firstly, prepare the apple filling. Peel the apples, clean them, and cut into thin slices. Cover with sugar and cinnamon and gently mix. Set aside.

Prepare the crumble. Put all ingredients in the bowl and knead to get fine crumbles.

Cover the round baking tray with butter and sprinkle with flour.

Prepare the sponge. Whip the butter with sugar. Add eggs, one by one. Finally, add the remaining ingredients and stir until combined. The sponge mixture must be thick. Cover the bottom of the baking tray.

Put half of the apple filling on it.

Preheat the oven on 180 degrees Celsius.

Prepare the vanilla pudding. Boil milk with sugar and add vanilla pudding powder. Cook until becomes thick and stir all the time. When cooked, pour on the cake.

Cover with the rest of the apple filling.

Lastly, sprinkle the cake with crumble. Bake for 50 minutes for crumble to turn golden brown.

Cover with the crumble.

You can serve your cake warm or cold. In every case, it’s delightful with a scoop of vanilla ice cream.
