My Mum’s Lambada Cake

Finally I present to you a recipe I promised long ago. The Lambada Cake is a creamy traybake with vanilla sponge, butter cookies, orange pudding, and buttercream, covered with chocolate. This was my favourite cake in childhood and even now I wish for every birthday from my mum to bake it. Since she’s been baking this cake for many years, she has mastered this recipe so you get a creamy but refreshing dessert.

The cake looks demanding but it’s not. I suggest you first prepare the buttercream because it needs to cool, but other layers don’t consume much time and in 2 hours your cake should be done. Ingredients are meant for baking tray of 30×40 cm dimensions or similar. This traybake is useful for larger parties because you can cut many slices.

 

Ingredients

Sponge

3 eggs

150 g sugar

200 g flour

8 g baking powder

0,5 dl water

0,5 dl vegetable oil

 

Pudding layer

1 l orange sparkling drink

3 packs of vanilla pudding powder

5 tablespoons sugar

 

200 g butter cookies

1 dl milk

4 tablespoons rum

 

Buttercream

0,5 l milk

5 tablespoons flour

150 g sugar

150 g butter

 

Chocolate glaze

150 g dark chocolate

150 g butter

 

Procedure

Firstly, cook the buttercream. Pour the milk into saucepan and boil it together with sugar. Take about 1 dl of milk away and whisk the flour in it so you get a homogenous mixture. Pour it into boiling milk and cook until boiling again or when the mixture is thick. Put away to cool.

For sponge, whisk the eggs with sugar. Add the remaining ingredients and stir. Cover the baking tray with parchment paper, pour the mixture in it and bake for 15 minutes on 180 degrees Celsius.

When baked, start preparing the pudding. Boil orange drink with sugar. Take away about 1 dl of drink and shake it together with pudding powder. Pour in boiling drink. Cook until boiling or until the mixture becomes thick. Pour it on sponge while hot.

Orange pudding layer

Warm the milk and add rum. Take the butter cookies and soak them in this liquid. Put them on orange pudding layer and cover the entire baking tray.

Butter cookies layer

Mix the butter for buttercream until it becomes pale and fluffy. Add the mixture you’ve cooked at the beginning. Stir thoroughly and spread the buttercream on traybake.

Lastly, prepare the chocolate glaze. Melt dark chocolate with butter. Pour it on traybake and let cool.

Chocolate glaze

Keep the cake in fridge and serve cold. It’s especially tasty when refrigerated at least overnight.
