Simple and moist pound cake, great for breakfast or by coffee. Optionally, you can cover it with chocolate, but in my opinion, there’s already enough chocolate in cake batter. Additional bonus – you can finally make those ripe bananas useful.
Ingredients (for one loaf)
100 g butter
120 g sugar
2 eggs
3 small bananas or 2 big
150 g yoghurt
70 g minced walnuts
225 g flour
10 g baking powder
15 g vanilla sugar
2 tablespoons oil
150 g dark chocolate, cut into small pieces
Procedure
Mix the butter with sugar. Add eggs one by one. Peel the bananas and smash them with fork. Together with yoghurt and oil, add them to the batter. Stir.
Mix together walnuts, vanilla sugar, flour, and baking powder. Add the mixture to the cake batter. Mix thoroughly to get a homogenous dough. Finally, add chocolate pieces.
Grease the baking tray with butter and dust it with flour. Fill it with cake batter. Bake for 50 minutes on 180 degrees Celsius.
The banana bread is delicious when freshly baked and warm (while the chocolate is still melted) as well as in next days after being refrigerated for a while.
