Coconut Cake from Scratch

Last week it happened to me I wanted to make dessert for lunch at my boyfriend’s parents’ but I didn’t have any ingredients. Unfortunately, it was Sunday – shops closed in Slovenia. So I made this simple coconut cake from scratch. I believe you have all those ingredients – hope so. Otherwise, don’t be like me and plan in advance 😊

 

Ingredients (for 24 cm baking tray)

Coconut sponge

  • 2 eggs
  • 90 g sugar
  • 100 g flour
  • 6 g baking powder
  • 1 teaspoon vanilla extract or vanilla sugar
  • 50 ml oil
  • 2 tbsp lemon juice 
  • 40 g coconut shavings

     

Juice of half of the lemon + 1 dl milk to moist the sponge cake

 

Buttercream

  • 500 ml milk
  • 80 g vanilla pudding powder
  • 3 tbsp sugar
  • 115 g butter
  • 2 tbsp coconut shavings

Procedure

Boil the milk with sugar. Add vanilla pudding powder and cook until it boils again. Let cool.

Whip the eggs with sugar. Slowly add flour with baking powder and coconut shavings. Stir and add vanilla extract, oil, and lemon juice. Stir again, pour the mixture in baking tray and bake for 15 minutes on 180 degrees Celsius.

Moist the sponge cake with mixture of lemon juice and milk. 

Prepare the frosting. Whip the butter and add cold vanilla pudding you prepared before, and coconut shavings. Mix thoroughly. Spread the mixture on sponge cake or frost the cake as seen on photo.
