Vegan banana muffins with chocolate pieces are a delicious treat when you suddenly crave sweet, homemade goodies. This is one of my easiest vegan recipes. Bananas are a substitute for eggs, and coconut yogurt is my favourite plant-based yogurt. The muffins will take you less than one hour to make, together with baking time.
Ingredients (16-18 pieces):
- 2 bananas
- 200 g coconut yogurt
- 10 ml vegetable oil
- 50 ml water
- 80 g sugar
- 200 g flour
- 8 g baking powder
- 10 g vanilla sugar/tsp vanilla essence
- 15 g raw cocoa powder
- 200 g dark chocolate
Smash the bananas and add them to yoghurt, oil, and water.
Mix dry ingredients: flour, sugar, baking powder, vanilla sugar, and cocoa powder.
Slowly add dry ingredients to the banana-yogurt mixture.
Cut dark chocolate in small pieces and add them to the mixture.
Fill the muffin cups and bake for 30 minutes on 180° C.
Muffins are best eaten the same day, especially when slightly warm and while the chocolate pieces are melted. If you store them in fridge, they can be good also the next three days.
