Berry Cottage Cheese Cake Slices

Today, I have a recipe for you which is a little bit more demanding, but I promise it’s delicious. It’s a seasonal and light dessert looking very appealing. These cake slices just call you to try them! Moreover, the dessert is basically a cake but it’s even better to have slices so you can serve some more pieces. So convenient when you have a lot of guests!

Cake slices are made of vanilla sponge cake, cottage cheese frosting, and strawberry-raspberry jelly topping. Both of the fruits are also hidden inside the cake.

 

Ingredients (for baking tray 35×40 cm)

Sponge cake:

3 eggs

150 g sugar

160 g flour

5 g baking powder

10 g vanilla sugar or 1 teaspoon vanilla essence

Tablespoon of oil

 

150 g strawberries, 150 g raspberries, 2 tablespoons of sugar for middle layer

 

Frosting:

750 g cottage cheese

500 ml whipping cream

4 tablespoons powdered sugar

3 teaspoons vanilla essence

Juice of 1 lime

 

Topping:

400 g raspberries

200 g strawberries

3 tablespoons sugar

1 pack of instant gelatine

 

Decoration (optionally):

100 g strawberries

100 ml whipping cream

 

Procedure

Whip the eggs with sugar. Add flour, baking powder, vanilla sugar, and oil. Stir thoroughly and bake for 15 minutes on 180 degrees Celsius.

Wash the strawberries and raspberries and cover them with sugar.

When the sponge cake is baked and cold, arrange the fruits on it. You can slice the strawberries in half so they won’t stand out of your cake.

Whip the whipping cream. Add cottage cheese, vanilla essence, powdered sugar, and lime juice. Mix it all together to get a homogenous mixture. Spread it carefully on the cake.

Prepare the topping. Clean strawberries and raspberries. Cover them with sugar and heat it up. Blend the mixture and slowly add gelatine powder. Stir for about a minute and then pour the topping on the cake. Put it the fridge for at least 2 hours for gelatine to form jelly, the best is if you leave the cake in fridge overnight.

Cut the cake into slices, I cut them in 4×4 cm squares. You can decorate every slice with strawberry pieces and whipped cream.

Additional tip: you can use non-lactose cottage cheese and whipping cream (or plant-based whipping cream) so dessert is suitable for those allergic to lactose as well. I can confirm it tastes the same 😊
