Tiramisu is a dessert which won’t let down your guests because most of the people like it. And so happened this time. But because I add something different to every dessert, I enriched the tiramisu with blueberries – with fresh ones and with blueberry sauce in the middle. Result? A creamy and refreshing dessert!
The preparation of this dessert is rather quick, since it takes about an hour. For the best result, cool your tiramisu in the fridge all day or through the night.
Ingredients (for 6 pieces or tray of dimensions 17×27 cm)
200 g ladyfingers
3 dl coffee (instant or espresso)
250 g mascarpone
200 ml whipping cream
2 tablespoons powdered sugar
3 tablespoons lemon juice
Teaspoon vanilla essence
400 g blueberries
3 tablespoons sugar
Cocoa powder for topping
Whip the whipping cream. Add mascarpone, powdered sugar, lemon juice, and vanilla essence. Stir thoroughly so you get a homogenous mixture.
Clean the blueberries. Half of them (200 g) cover with sugar and heat up to make blueberry sauce. Blend the mixture when hot. Let cool.
Prepare the coffee. You can add some rum in it for better taste. Prepare the baking tray – I used the glass one.
Dip the ladyfingers in coffee and cover the bottom of the baking tray. Sprinkle the fresh blueberries all over and cover with half of the cream.
Again, the second layer of ladyfingers. Dip the ladyfingers in coffee – but not as much since the blueberry sauce will be on top of them.
Pour the blueberry sauce all over the tiramisu.
Spread the remaining cream on it.
Sprinkle with raw cocoa powder and put in the fridge for at least 6 hours (the best if overnight).
