Banana Muffins

What to do when you have too ripe bananas in your fruit basket? I think this is a good motivation to bake some tasty banana muffins! Banana Muffins are made of banana sponge with a lot of chocolate pieces inside. Their preparation is very simple and quick – you will need half an hour only. 

Ingredients for 12 pieces
  • 1 egg
  • 75 g sugar
  • 1 ripe banana
  • 100 ml yogurt
  • 50 ml oil
  • 100 g flour
  • 10 g cocoa powder
  • 8 g baking powder
  • 100 g dark chocolate

     

Procedure

Peel the banana and smash it with forks. Cut the dark chocolate into small pieces.

Whip the egg with sugar. Add banana, yogurt, and oil. Stir thoroughly. Add the dry ingredients: flour, cocoa powder, and baking powder. Stir again. Lastly, add pieces of dark chocolate.

Put the mixture in muffin cups and bake them for about 20 minutes on 180° C.
