Long time, no muffin recipe, so I decided to make some muffins again. One of my favourite cakes is the black forest cake and since I had no time (and you can’t make a whole cake for two people) I made black forest muffins. A lot of chocolate and cocoa powder, and they are richly loaded with sour cherries as well. Optionally, you can frost them with whipped cream to get the whole Black Forest package.
Black Forest Muffins are very easy to make and will take you about 45 minutes, together with baking time. The ingredients are adequate for one muffin baking tray or 12 pieces.
- 1 egg
- 80 g sugar
- 120 g flour
- 30 g cocoa powder
- 100 g melted chocolate
- Half of the jar of canned sour cherries
- 100 ml juice from canned sour cherries
- 100 ml milk
- 50 ml oil
- A teaspoon of baking powder
- 100 g dark chocolate cut into small pieces
Remove stones from sour cherries and cut dark chocolate into small pieces.
Whip the egg with sugar. Meanwhile, melt the chocolate. Prepare the baking tray for muffins. Turn on the oven and heat it to 180° C. Add flour, cocoa and baking powder, milk, cherry juice, and oil. Stir until just combined and add melted chocolate.
Lastly, mix in the pieces of dark chocolate and half of the cherries.
Fill the muffin cups with dough. Take the rest of the cherries and arrange them on the muffins. Slightly push them into the dough.
Bake for about 25 minutes.
Optionally, when baked, you can cover your muffins with melted dark chocolate or decorate them with whipped cream and sprinkle with dark chocolate shavings.
