Long time, no muffins recipe, so I decided to make some muffins again. One of my favourite cakes is the black forest cake and since I had no time (and you can’t make a whole cake for two people) I made black forest muffins. A lot of chocolate, and I wasn’t mean with cherries either.
80 g sugar
120 g flour
30 g cocoa powder
100 g melted chocolate
Half of the jar of canned cherries
1 dl juice from canned cherries
1 dl milk
0,5 dl oil
A teaspoon of baking powder
100 g dark chocolate cut into small pieces
Remove the stones from cherries.
Cut dark chocolate into small pieces.
Whip the egg with sugar. Melt the chocolate. Prepare the baking tray for muffins. Turn on the oven and heat it to 180 degrees Celsius. Add flour, cocoa and baking powder, milk, cherry juice, and oil. Stir and add melted chocolate.
Lastly, mix in the pieces of dark chocolate and half of the cherries.
Fill the muffin cups with dough. Take the rest of the cherries and arrange them on the muffins. Slightly push them into the dough.
Bake for about 25 minutes.
Optionally, when baked, you can cover your muffins with melted dark chocolate or decorate them with whipped cream and sprinkle with dark chocolate shavings.
