This week is perfect for a night-in with my friends. When we have these our »mini-parties«, I’m usually the one to bring something sweet. My friends just love this simple cheesecake, which doesn’t require much work, and you don’t even have to bake. Just be careful that you don’t overdo in the chocolate liquor. It’s very delicious, but only in small servings 😉
Chocolate Liquor Cheesecake will take you about 1 hour of preparation – or less, if you are an experienced baker. If you use store-bought cookie crumbles, the preparation time shortens for about 15 minutes.
Ingredients (for 12 pieces)
- 250 g butter cookies
- 80 g butter
- 6 tablespoons chocolate liquor
- 500 g mascarpone cheese
- Tablespoon of icing sugar
- 200 g chocolate
- 100 ml chocolate liquor (or as much as you like, more or less)
- 100 g chocolate
- 5 tablespoons chocolate liquor
Crush the cookies or buy the cookie crumbles. Melt the butter and add it to the cookies. Add the liquor and stir thoroughly.
Prepare the baking tray. I use the round one with a 24 cm diameter. Put in the cookie crust and push it well. Make the edge as well.
Melt the chocolate. Mix the mascarpone cheese with icing sugar. Add melted chocolate and chocolate liquor. Stir it until you get a homogenous mixture. Spread it on the cookie crust and put the cake in the fridge for two hours.
Melt the chocolate for the drizzle. When melted, add the liquor and stir it. Take the cheesecake out of the fridge and make the drizzle.
It’s the best that you leave your cheesecake in the fridge until the party. Be careful with the remaining liquor!
