Quick Cottage Cheese Cake for Summer Days

There was plenty of cottage cheese left in my fridge which I definitely couldn’t have eaten, and it would be a pity for it to go to waste. That’s why I decided to make – you’ve guessed correctly – a cottage cheese cake! Let me say in the first place, a cottage cheese cake ISN’T a cheesecake. Cottage cheese cake is made of fresh, cottage cheese, and in cheesecake, there’s no room for cottage cheese, but you must use mascarpone cheese or soft cheese.

Back to our cottage cheese cake. I prepared for you a very simple recipe for a wonderful little cake which is perfect dessert on a hot summer day or for a picnic. You don’t need any special skills to prepare this delicious dessert, in fact, the preparation itself is »a piece of cake«! 😊 And probably you have all the ingredients at home.

Instead of canned fruit, fresh fruit could also be used. In that case, I suggest that you slice the fruit and cover it with a tablespoon of sugar, otherwise it could happen that the cake would be too sour.

Ingredients (for 12 pieces, 26 cm cake)
Cocoa Sponge
  • 2 eggs
  • 1/2 cup of sugar
  • 1/2 cup of flour
  • 1 teaspoon baking powder
  • 1 tablespoon cocoa powder
  • 2,5 tablespoons sunflower oil
Cottage Cheese and Fruit Topping
  • Canned fruit (pineapple, peach etc.)
  • 500 g cottage cheese
  • 200 ml whipping cream
  • 3 tablespoons icing sugar
  • 2 tablespoons of lemon juice (optional)
Instructions


Cover the round baking tray (diameter of 26 cm) with baking paper. Whisk the eggs with sugar for 7 minutes. Add flour, baking powder, cocoa powder, and oil. Mix it thoroughly, pour in into the baking tray and bake 25 minutes at 180° C.

Wait for the sponge cake to cool down, remove the baking paper and put it back in the baking tray. Slice the canned fruit and cover the base with it.

Prepare the cottage cheese frosting. Whip the cream, add cottage cheese, icing sugar and lemon juice. Mix it until you get a nice, smooth texture. Put it on the biscuit, covered with fruit.

Put in the fridge to cool for a couple of hours.

Now it’s time to decorate a little bit. I used fresh nectarines, but you can use any fruit you like! Enjoy the cake and let me know in the comments how you liked it!
